Vineyard : 35-40 years old.
Soil type : Clay-Calcareous Trias Period (250/200 millions years ago).
Elevation : 200-280 m.
Exposition : Southwest.
Harvest date : September.
Average yield : approx. 35 hl/ha.
Cultivation : The vines are planted on slopes on terraces made of dry stones and receive traditional treatment, without herbicides or pesticides. Hand harvesting occurs in small boxes (20kg-45lb), early morning.
Vinification : Gentle pressing is followed by alcoholic fermentation at a low temperature. No malolactic.
Aging method : 6 months in Stainless with the lees.
